You can create your pasta with zucchini. You heard about spaghetti squash, but that is not a low-carb vegetable. Stick with zucchinis instead for that.


You will want to head over to the grocery store and get:

  • One medium-sized zucchini
  • One cup of fresh basil
  • One tablespoon of pesto sauce
  • A few cherry tomatoes, meaning three to seven
  • A few pieces of walnuts to sprinkle
  • A pinch of salt and pepper
  • One tablespoon of olive oil


Step # 1: If you like feta cheese, you can add one-quarter of a cup’s worth of it if you like as well. If you don’t, then you don’t need it.

Step # 2: You want to make noodles out of zucchini.

Step # 3: You need to wash the zucchini and then take your spiral maker so you can make those healthy noodles.

Step # 4: You can also strip them by cutting them if you don’t have a spiral maker. However, that will be very time-consuming. You do not want to do that. It is a good idea to get one to save you a lot of time.

Step # 5: The next step is to take a pan, put the olive oil in it, and put the zoodles there.

Step # 6: Put the stove on medium heat, and let it fry. In the meantime, cut your cherry tomatoes in half and then toss them there too. You can also add a sprinkle of walnuts.

Step # 7: Keep tossing them for about eight minutes, as that is the time it takes to cook.

Step # 8: Put some of the basil on there, and feta cheese if you choose.

Zucchini Basil Soup

First, you will need to get to the grocery store and get the following items:

  • Five medium zucchinis
  • One white onion
  • Eight cloves of minced garlic
  • Four cups of vegetable broth
  • One cup of fresh basil leaves
  • Two tablespoons of olive oil
  • A sprinkle of salt and pepper


Step # 1: You need to chop and dice the zucchini and onions first.

Step # 2: Then take a large non-stick pot. Put the olive oil in there and put the stove on medium heat.

Step # 3: Place the chopped onion and minced garlic in the pot, mix it well, and saute them simultaneously.

Step # 4: You will know when to put the zucchini in the pot. That is when there is an aroma from the onion and garlic.

Step # 5: Next, add the zucchini and saute it for about two minutes.

Step # 6: Then add the vegetable broth and the salt, and you will want to bring it to a boil. Once it boils, then lower the heat, so it simmers until the zucchini softens.

Step # 7: Stir it well until the zucchini completely smoothens, and then you can add some pepper to taste.

Cheesy Cauliflower Soup

You hear a lot about cauliflower being a replacement for pizza crust as it can be pretty delicious and is low carb. You will want to try a soup before your entree that consists of cauliflower rice with cheese. You will love this option!


You will need to head to the grocery store and grab:

  • One large head of cauliflower
  • Two cups of vegetable broth
  • Two tablespoons of water
  • One tablespoon of olive oil
  • Two cloves of minced garlic
  • One diced shallot
  • Eight ounces of cheddar cheese shredded
  • Two cups of unsweetened almond milk
  • Salt and pepper to taste
  • One cooked bacon sliced up, which is optional
  • One sliced scallion which is optional


Step # 1: Add the cauliflower florets to your food processor, and you want to pulse it several times, so it turns into ‘rice’.

Step # 2: Take a large non-stick pot, put the olive oil, garlic, and shallots, and put it on medium heat. Saute them for two minutes.

Step # 3: Then you will add your water and cauliflower ‘rice’ to cook for five minutes.

Step # 4: Then add the milk and the broth, allow it to boil, and then bring it down to a simmer for five minutes.

Step # 5: Then you will want to stir the cheese into the pot. Keep going until it is smooth and then add your salt and pepper to taste.

Step # 6: You can throw in extra cheese, bacon pieces, and scallions if you like! Enjoy it!
